Influence of metals on oxidative stability of vegetable oil by micro-oxidation method

摘要

The oxidative stability of rapeseed oil containing N-phenyl-2-naphthylamine (PAN) as an antioxidant was investigated on a micro-oxidation reactor equipped with various test cups. The effects of various metals on the oxidative stability and oxidation-induced polymerization rate of the rapeseed oil and the antioxidant were also examined on the same apparatus. It was found that the polymerization rate of oil is faster in the copper eup than that in the steel, aluminum, and glass cups. And because of the initiation function of the copper to the polymerization, the activity of PAN as an antioxidant is decreased greatly.
